While the FoodExpert-ID Array can measure the absence or presence of 12 different species of mammals, 5 species of poultry, and 16 species of fish, let's simplify it down to detecting 4 different species: goose, sheep, cow, and pig.
Each square on the array is filled with probes that will detect either:
Goose DNA (green)
Sheep DNA (purple)
Cow DNA (blue)
Pig DNA (yellow)
In our example, the foie gras that we analyzed only was positive for goose. No DNA (thus, no fluorescence) was detected for either of the three alternate organisms, meaning no sheep, cow or pig went into making the goose foie gras.
